Chickpea, Pumpkin & Feta Salad


Super easy, super tasty, quick, cheap & healthy - this one ticks all the boxes!

Ingredients (serves 4)
500g pumpkin, cubed
1 red onion, chopped
olive oil spray
1/2 tablespoon Moroccan seasoning
400g can chickpeas
200g low-fat feta

Method
Preheat oven to 200 degrees celsius.

Spread pumpkin and onion on a lined oven tray and spray with olive oil.  Sprinkle with seasoning.

Bake for about 30 minutes, until tender and golden.

Combine chickpeas, feta with pumpkin & onion.  Serve.
